  • 微臭,但无霉败的臭气;有引湿性,是以胰蛋白酶、胰淀粉酶、胰脂肪酶为主所组成的多种酶的混合物,水溶液煮沸或遇酸即失去酶活力。本品在中性或弱碱性环境中(酸碱度6.8~8.5)可促进蛋白质、淀粉及脂肪的消化。有吸湿性。溶于水呈微浑溶液,不溶于乙醇和乙醚。
