  • 外观性质:乳糖特性:由哺乳动物的乳中分出的一种双糖。牛乳中约含4%-5%,人乳中约含6.7%。经酸性水解得等分子的D-葡萄糖和D-半乳糖。是还原糖,能还原费林溶液。在常温水溶液中结晶得α-乳糖,在93℃以上结晶得β-乳糖。α-乳糖即普通的乳糖。有微弱的甜味,通常带一分子结晶水。呈单斜晶体。120℃时失去结晶水,快速加热,熔点201-202℃。其水溶液有变旋现象,[a]20D-92.6°→+83.5°(10分钟)→+69°(50分钟)→+52.3°(22小时)。β-乳糖比α-乳糖稍甜。白色晶体。熔点252℃。其水溶液也有变旋现象。[α]25D+34°(3分钟)→+39°(6分钟)→+46°(1小时)→52.3°(22小时)。β-乳糖在常温吸水后能转变成α-乳糖,后者加热至93℃以上又变成β-乳糖。乳糖溶于水,微溶于甲醇、乙醇,不溶于乙醚和氯仿。β-乳糖特性:溶于水,微溶于乙醇,不溶于乙醚、氯仿熔点:224 °Calpha:55.15° (c=10, H2O/NH3)
